There seems to be two marriage records for these folks: July 20, 1850, in Eastwood, and August 5, 1850, at St. Cuthbert's, Edinburgh parish, Edinburgh, Midlothian, Scotland. Having only seen the IGI records and not the actual parish records, it is hard to say if these are the same people. Perhaps, as was often the case, Jane and Joseph were married in the home parish of one and the marriage was also noted in the home parish of the other. Possibly also, the earlier date was when the Banns were called and the later one the date of the marriage.

October 22, 2000:
This is from the 1851 census, Eastwood parish. This address was two doors down from Robert and Margaret Coubrough who were likely Joseph's mother's brother and his wife.

Notes:
1. The Gibbs had 2 "rooms with one or more windows." See note under marriage of Robert Coubrough and Agnes Morton.
2. The Matthew who was boarding with Jane and Joseph was probably the son of Joseph's granduncle and grandaunt, Matthew Coubrough and Jean Allan. Their son, Matthew Gibb C. was born 25 Dec 1851, in Neilston parish, which would have made him 9 years old at the time of the April 1861 census. Why Matt was living with his father's grandnephew is not known, but possibly Matt's mother was unwell. Or she may have died at his birth, though she would have been only about 41. According to the Dec 29, 1865, marriage record of Matt's sister, Jane, their mother was deceased at that time.
3. Another possibility is that Joseph Gibb was young Matt's father. It was not uncommon for illegitimate children to have their mother's surname as their own and their father' surname as a middle name. Joseph Gibb and his cousin, Jane Coubrough, were the right age at the right place at the right time to have been young Matt's parents. And he certainly would be neither the first nor the last grandchild to be passed off as his mother's sibling.
